This summer was one to remember! Our team worked diligently at executing so many events that we are incredibly proud of. From backyard barbecues, exhibit openings, wedding receptions and more, we did it all. Summertime in Minnesota is so special—the air is clean (besides those few days affected by Canadian wildfires), the sun is bright and the food is refreshing.
Of all events executed this summer, there is a very special one that stands out. Late August, our team helped Chase & Miranda tie the knot. The day was perfect: sunshine, fresh clean air and the most beautiful setup hosted on land owned by the bride’s family—an awe-inspiring, open space that used to be home of her grandfather's Christmas-tree farm.
The bride and groom prioritized quality of food for their big day, and you could tell. Here's a glimpse into what was served:
Hors d'Oeuvres: esquites, heirloom bruschetta, ricotta tarts finished with Ames Farms single-source honey
Dinner: an array of fresh salads, summer herb roasted chicken with chimichurri and piperade couscous, beef bourguignon with pickled vegetables, sun-dried tomato risotto stuffed peppers with fresh pesto
For dessert, Chef Helen worked closely with the couple to execute four selections. Two of these selections were recipes from the bride and groom’s grandmothers. This was such a special and unique way to incorporate family members into their special day. Miranda’s grandmother used to make Mandarin Orange Cake throughout her childhood, and although she is no longer earthbound this cake sparked lots of joy among guests.
To round out their special evening, our team grilled chicken wings and made fresh focaccia pizza for late night bites before packing up the cargo van and heading back to the cities.
